Besides photography and reading (...and reality TV), food is one of my passions. To the detriment of my waistline. Part of my problem is that after a crappy, horrible day, I know that making something cheesy or gooey or oozing will make me feel a little better. My preferred expression is that I "eat my feelings." Basically, when work spirals out of control, I know that making pasta with fresh tomato sauce and lots of Parmesan cheese will give me some small dose of comfort. I guess things could be worse, I could only "drink my feelings."
On days when I know I need something filling and comforting, I try to make swaps or add ingredients that result in a dish that, while certainly not Atkins approved, have a good bit of nutrition. For example:
Ziti,, fresh broccoli, and cherry tomatoes with reduced fat cheddar cheese sauce. The perfect accompaniment to a cold evening watching Real Housewives while the husband is out of town.
Those cherry tomatoes were great - and my favorite way to normally eat tomatoes like these is to cut them in half and then slow-roast them for hours at 250 degrees. I haven't done that with the remaining tomatoes yet because I wanted to do this first.
